Busy Day Spicy Shrimp Recipe

Makes 4 servings

1 ea. Large red onion, peeled, halved and thinly sliced
2 Tbsp. Olive oil
1 lb. Raw shrimp (medium to large), peeled and deveined
1 can (10-ounces) Diced Ro-tel Tomatoes *(original type)
1 tsp. salt
Chopped parsley, for garnish (optional)

  • Sauté the onion in the oil, stirring occasionally, until tender – about 5 minutes.
  • Stir in the shrimp and cook, stirring, just until the shrimp is pink and starts to curl.
  • Season with salt and sprinkle with parsley (if desired.)
  • Serve over rice.
  • Note: More hot pepper sauce may be passed at the table for those who like it spicier.

*Other brands of tomatoes and green chilies may be used, but Ro-tel brand is preferred.
